Why does high-altitude coffee taste so different? Slower development, denser beans, higher sugar concentration — altitude may be the single biggest quality driver in specialty coffee.

Above 1,500 metres, the air is thinner and cooler. Coffee cherries develop more slowly. That slow development allows sugars to accumulate in the cherry, compounds to develop complexity, acids to form in ways they simply can't at lower elevations where the heat accelerates everything.

The result: denser beans. Harder to roast — they resist heat — but when you get it right, the cup has a clarity and complexity that low-altitude coffee simply can't match. You can taste altitude. It shows up as brightness, as floral aromatics, as a long, clean finish.

All five of our single-origin offerings come from above 1,100 MASL. Our Ethiopia and Kenya lots, from 1,700–2,100m, are among the highest-grown coffees available. The altitude shows in the cup — dramatically, undeniably.

When clients ask why specialty coffee costs more, altitude is part of the answer. Smaller yields. More selective picking. More careful processing. But also: a better cup.
